A sour ale brewed with soft Ontario winter wheat, Tangelo juice/zest, and local honey. Aged in Ontario white wine barrels for 9 months prior to bottle conditioning for an additional 6 months.

Bastet Sauvage blurs the lines between sour beer and white wine. 25% Sauvignon Blanc juice from Niagara on the lake was fermented with 75% mature sour beer from our foeder. After 3 months in stainless it was then re-fermented in the bottle and conditioned for an additional 3 months.
