Sweet Premium Wine 2018 (9.2% abv) 100 IBU [American Style Barleywine]
Not to be confused with actual wine, this beer is made entirely of barley malt. This style was originally made in England as a domestic alternative to imported European wines. We have ‘Americanized’ it by using large amount of distinctive American hops. Sweet Premium Wine is an American-style barleywine hopped with Cascade, Chinook, Centennial and Idaho 7 for notes of grapefruit and orange with some tropical pine notes. We’ve used a mixture of premium English malt and Canadian malt for a slightly biscuity malt undertone, as well as a mixture of English caramel malts for a depth of caramel and toffee notes. This beer can be drank fresh to enjoy the hop character, or aged for 3+ years to allow the flavours to mellow.

Spiced with cardamom. This is a unique take on the classic Belgian wit. Incredibly well rounded and full of flavor despite it being such a light beer.

Brewed without barley (wheat and oats only) it was then aged in an Ontario Chardonnay puncheon with Brett and Bacteria for 9 months. Re-fermented in the bottle with Champagne yeast and then bottle conditioned since August 2018.

A strong Saison brewed with Meyer lemons, and Golden Belgian candi syrup in collaboration with @drinkwillibald. It was then aged in their freshly emptied Gin casks with Brett and Bacteria for 4 months, prior to re-fermentation in the bottle.

“Honey Bell” is a sour ale brewed with soft Ontario winter wheat, Tangelo juice/zest, and local honey. Aged in Ontario white wine barrels for 9 months with Brett and Bacteria prior to bottle conditioning for an additional 6 months.

Loads of fresh raspberries on the nose. Tart raspberry with hints of citrus on the sip. Refreshingly clean & tart with a slightly sweet cereal finish.

OASIS - Starting off as our golden sour-base beer, fermented and aged in oak using our house culture of yeast and bacteria. Refermented with several hundred pounds of Niagara grown peaches and apricots.

This Mango Peach Sour will have you wishing for summer days. A taste reminiscent of fuzzy peaches that ends with a mellow mango finish. A balanced sour with a sunny disposition.
